Vinification

Manual harvest in the middle of September. Fermentation and 6 days maceration at 26-28 °C in order to preserve the fruity aroma of the grapes. Refinement in stainless steel vats and bottling in the first spring after harvest.

To enjoy young (within 4 years after harvest).

Serving temperature

16-18 °C

Sausage products, appetizers, egg-pasta dishes, grilled meat, fresh or medium-ripened cheese.

A mainstay of the wine tradition in Piedmont

Dolcetto d’Alba Doc is said to be one of the mainstays of the wine tradition in Piedmont, and it perfectly matches with some local dishes - tajarin, finanziera, tome (typical cheese) from Murazzano. The Vineyards, located on the steep slopes of the Gallina Cru, provide excellent, full-scented, and ripe grapes thanks to an enviable south-facing exposure of the slopes.
