Manual harvest in the second half of September. Fermentation with maceration for approximately 6 days at low temperature. Maturation for approximately 6 months in steel tanks.

To enjoy young and no more than 3 years after the harvest.

Pairings
Grignolino has two wonderful souls: drunk chilled, it's an unusual aperitif or a delightful accompaniment to salads and grilled dishes. At room temperature, its velvety tannins make a very elegant accompaniment to red meats and cheeses.

A classic Piedmontese wine
Grignolino is one of Piedmont's classic grape varieties, with distinctive characteristics: its skin is low in anthocyanins (the colorants), but the bunches contain a large number of seeds, which give the wine a pronounced tannicity. Historical accounts describe it as a highly prized wine, even boasting legendary therapeutic properties.
