Manual harvest at the end of August. Brief maceration on the skins and fermentation at a temperature of 16°C. 20% of the wine matures in oak barrels. Second fermentation in the spring following harvest and maturation on the lees for approximately 24 months.

From 3 to 30 months from the disgorging.

Vinification Rosé de Saignée
The unusual, the provocative: a classic method with Rosé in the land of great red wines. Vinification is "Rosé de Saignée," vinified with a brief maceration of the skins in contact with the must. This makes it a sparkling wine with a strong character, even for the most flavorful pairings.
